Summertime BBQ

Boston butt cooked in the crock pot always makes for the most tender and flavorful pulled pork, but what makes this recipe even better is that the sauce and slaw are made from scratch. I have always wanted to cook my own BBQ sauce and I would say my first attempt was more than successful. I think something like this is fun because now I want to try again and make it less sweet and then try again and make it a little spicier. There are so many different flavors for BBQ sauces and I would love to try making all different kinds and even combine ingredients from the different recipes to come up with my own “signature” sauce. So I would say that the pulled pork with homemade BBQ sauce is an open chapter that will take many different trials to complete!

What you need:

For the crock pot

– boston butt (about 3 pounds)
– white vinegar
– hot sauce
– 1 medium onion, chopped
– sweet Hawaiian rolls

Spray crock pot with non stick spray. Place roast in cork pot and using a knife cut three big slits across the top. Mix together white vinegar and hot sauce (equal parts) and pour evenly into the slits. Next, rub the brown sugar on the top and sides of the roast. Cover with chopped onion and let cook on low for 6-8 hours.

For the sauce
– 1 1/2 cups ketchup
– 1/2 cup red wine vinegar
– 1/2 cup Worcestershire
– 1 tablespoon soy sauce
– 1/2 cup brown sugar
– 1/2 tbsp Dijon mustard

Bring all ingredients to a boil in a heavy saucepan. Reduce heat to low and simmer until the sauce thickens, stirring occasionally.

For the slaw

– carrots
– 1 medium red cabbage
– olive oil mayonnaise
– 1 tablespoon lemon juice
– fresh parsley
– salt and pepper

Cut the carrots and cabbage into thin, long slices. Place in a bowl and mix with mayonnaise, lemon and salt and pepper. I just added a little and mixed together and then added a little more until the consistency looked right.

Once the pork is finished cooking, dump contents onto a large baking sheet. Discard any fat and shred the meat with two forks, placing contents back into the crock pot. Stir in 1/2 cup of your homemade sauce. Place meat on each roll and drizzle with a little more BBQ sauce and top with slaw.
