Chicken and Cheese Laza Roll-Ups

If your on and addicted to Pinterest like I am then you have probably seen or even “re-pinned” lasagna roll ups…but the question is…have you tried them? They are super easy and just as good as the classic prep. I decided to use chicken in mine, but of course you could use the meat of choice or even do it veggie style! The great thing about this recipe is that you control the quantity! As many noodles as you cook is as many roll ups as you will make, so this is great if you need a meal for just two people, or for a large group!

What you need:

  • Chicken (I used a rotisserie and took it off the bone and then cut it into small chunks)
  • Lasagna noodles
  • Red sauce
  • Minced garlic (duh!)
  • Dried oregano
  • Part skim ricotta cheese
  • Shredded mozzarella cheese
  • Shredded parmesan cheese

As you may have noticed there are no quantities to the ingredients listed above, that’s because I didn’t measure! I used the entire rotisserie chicken and then just added cheese and garlic until I thought it looked cheesy enough! I mostly used ricotta and mozz and just added a little parmesan.

Then:

  • Cook lasagna noodles according to package
  • Meanwhile, mix chicken, garlic, oregano, and all of the cheeses together in a big bowl
  • Spread a thin layer of red sauce on the bottom of your baking dish
  • Pre-heat oven to 375 degrees
  • Once noodles are finished drain and pat dry with a paper towel
  • Take one noodle and using a spoon spread a light layer of sauce on the noodle
  • Next spread the chicken mixture on the noodle, leaving a little extra room at the top to roll it up
  • Starting from the bottom of the noodle roll up and place seam side down in your baking dish
  • Do this for all the noodles
  • Pour remaining sauce over the noodles
  • Cover and bake in the oven for 30 minutes
  • Sprinkle cheese (your choice) over the top of and bake for additional 5 minutes, or until cheese is melted and sauce is bubbly!!
